Low-Calorie Mini Chocolate Loaf Cake

Ingredients
  • 60g 1:1 zero calorie sugar replacement
  • 1 large egg
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 40g 0% milkfat greek yogurt
  • 2 tbsp unsweetened almond milk
  • 65g self rising flour
  • 1/2 tsp baking powder
  • 7g unsweetened cacao powder
  • 3g black cocoa powder*
Instructions
  1. Preheat your oven to 350°F (175°C) and grease and/or line a mini loaf pan with parchment paper.
  2. In a medium bowl, mix the sugar substitute and egg till combined.
  3. Add vanilla, salt, yogurt, and almond milk.
  4. Mix in the flour, baking powder, and cocoa powders.
  5. Pour batter into the prepared pan and bake for 18-23 minutes.
  6. Let cool for 7-10 minutes then cut into 8 even slices.
