White Chocolate Chip Lemon Cookies

Ingredients
Cookie Dough
- 1/2 cup (115g) unsalted butter, softened
- 1/3 cup + 1 tbsp (75g) granulated sugar
- 1/3 cup + 1 tbsp (75g) light brown sugar
- 1 tbsp lemon zest
- 1 large egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1 tsp fresh lemon juice
- 1 3/4 cups + 1 tbsp (230g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (112g) white chocolate chips/chunks
Lemon Glaze

Small splash of milk/cream only if needed

1-2 tsp lemon juice, added gradually

1/2 cup (60g) powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a tray with parchment paper.
- Rub the lemon zest into the granulated sugar until fragrant.
- In a large bowl, beat the softened butter, lemon sugar, and brown sugar until creamy.
- Add the egg, egg yolk, vanilla extract, and lemon juice. Mix until combined.
- Mix in the flour, baking powder, baking soda, and salt.
- Fold in the white chocolate chips.
- Chill the dough in the fridge for at least 1 hour.
- Divide the dough into 6 portions. Roll into balls and flatten slightly on the tray.
- Bake for 16-22 minutes, or until the edges are set and lightly golden while the centers still look soft.
- Make the glaze while the cookies are cooling. Mix the powdered sugar with 1 tsp lemon juice. Add more lemon juice, a little at a time, until smooth and at the desired consistency. Add a small splash of cream or milk if desired.
- Drizzle the glaze over the cooled cookies and finish with a little lemon zest.
